Italian BBQ Team
There are three of us: Carlo, Alex and Gigi. But the story starts with two — Alex and Carlo, in another team, in another federation, both fresh arrivals. Different in everything, identical in one thing: an obsession with detail.
Treating BBQ as a reason for living. Measuring every cook, taking notes, running a debrief after every contest — what worked, what didn't, what I change next time. Never satisfied, always chasing the next step, no matter the result.
From there the decision: build a team from scratch and throw ourselves into KCBS, the queen federation of world BBQ. Gigi came later. Same obsession, same drive to do things properly. He felt right at home.
At every contest there's also Gianluca, from Fontattak Smoker — the keeper of the coals: he keeps the smokers on temperature and handles the BBQ rigs. A sponsor on paper, part of the team in practice.

We ride the KCBS, SCA and RCOA circuits. Master Series, One Meat, long weekends — we set off on Friday with meat, rub, smoker and a single fixed idea: come home with a few more cards in the deck. In a contest you can't kid yourself: either that piece of meat is good, or it isn't. The judges speak with scores, not compliments.
On Instagram, YouTube and Facebook. No glossy-magazine filter: behind the scenes, recipes in testing, mistakes, debriefs — whether you win or lose you have to understand why, and the hard part is exactly when you win. If you're a cowboy too, that's where we meet.
Every now and then we open the gate and run a course. It's not our trade and we don't want it to become one — for us BBQ stays a passion, not a job. But if you really want to learn, we'll find you a seat by the fire. Write to us.
